Make the Cheesecake Filling
In a large mixing bowl, beat the cream cheese and granulated sugar until smooth. Add the sour cream, eggs, and vanilla extract, mixing until well combined. Gently fold in the diced green apples.

Combine and Bake
Pour the cheesecake filling over the cooled crust. Drizzle caramel sauce over the top and use a knife to swirl it gently into the batter. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly.

Turn off the oven and crack the door open, allowing the cheesecake to cool inside for 1 hour. Remove from the oven and refrigerate for at least 4 hours or overnight.

In a mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.
