Scottish Ale Shepherd’s Pie Recipe
Ground bison simmered in our seasonal Scottish Ale demi-glace with julienned zucchini, carrots, squash, and green peas. Topped with house-made roasted garlic mashed red potatoes. Finished with a touch of bacon jam.

Preparation of Filling

Cook the Vegetables
In a large skillet over medium heat, add the ground bison and cook until browned. Add the zucchini, carrots, yellow squash, and green peas. Sauté for 5-7 minutes until the vegetables are tender.

Add Liquids
Pour in the Scottish Ale and beef broth. Bring to a simmer and let it cook for 10 minutes until the liquid reduces slightly. Season with salt and pepper.

Make Mashed Potatoes
Add roasted garlic, butter, and milk to the potatoes. Mash until creamy and smooth. Season with salt and pepper to taste.
Assembly and Baking

Layer the Shepherd’s Pie
Preheat your oven to 400°F (200°C). In a baking dish, spread the bison and vegetable mixture evenly. Top with a generous layer of roasted garlic mashed potatoes.

Bake in the preheated oven for 20-25 minutes until the top is golden and crispy.

Finish with Bacon Jam
Remove from the oven and drizzle with bacon jam before serving.
