    Make the Pasta Dough

    In a large bowl, mix the flour and salt. Create a well in the center and add the eggs and olive oil. Gradually mix the flour into the eggs using a fork, until a dough forms. Knead for about 10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

    Prepare the Lobster Filling

    In a bowl, combine lobster meat, ricotta cheese, Parmesan cheese, chives, lemon zest, salt, and black pepper. Mix well and set aside.

    Roll Out the Pasta

    After resting, divide the dough into four pieces. Roll out each piece as thin as possible using a pasta machine or rolling pin, dusting with flour to prevent sticking.

    Form the Ravioli

    Place a teaspoon of filling on one half of the rolled-out pasta. Fold the other half over and press down to seal. Cut out individual ravioli using a pasta cutter or knife.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Cook the ravioli in batches for about 4-5 minutes or until they float to the surface. Remove with a slotted spoon and drain.

    Make the Sauce

    In a saucepan, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes. Stir in heavy cream, lemon juice, salt, and black pepper. Simmer for 5 minutes until slightly thickened. Stir in chopped parsley.

    Plate the ravioli and drizzle the sauce over it. Garnish with additional parsley and serve immediately.
