Make the Crepe Batter

In a large mixing bowl, whisk together the flour, milk, eggs, and salt until smooth. Let the batter sit for about 30 minutes to allow the gluten to relax.

Cook the Bacon

In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and drain on paper towels. Once cooled, chop the bacon into small pieces.

Cook the Crepes

In the same skillet, add a little olive oil or butter over medium heat. Pour about 1/4 cup of the crepe batter into the skillet, tilting to spread it evenly. Cook for about 1-2 minutes until the edges lift and the bottom is light golden brown. Flip and cook for another minute. Repeat with remaining batter.

Assemble the Crepes

On one half of each crepe, place a portion of chopped bacon and sprinkle mozzarella cheese. Fold the crepe over and let it cook for another minute until the cheese melts.

Prepare the Salsa

Serve with a side of homemade salsa made from chopped tomatoes, onions, cilantro, lime juice, and salt to taste.
