Basil Pesto Marinade

Preparation

Marinate the Chicken

1. Prepare the Chicken

Cut boneless, skinless chicken breasts into bite-sized cubes. Place them in a large mixing bowl.

2. Add Pesto Marinade

Add fresh basil pesto to the bowl with the chicken (about 1/2 cup per pound of chicken). Toss well to coat all the chicken pieces evenly. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor.

Grill the Chicken Bites

3. Preheat the Grill

Preheat an outdoor grill or stovetop grill pan to medium-high heat. Lightly oil the grill grates to prevent sticking.

4. Skewer & Grill

Thread the marinated chicken bites onto soaked wooden skewers (if using wooden skewers, soak them in water for 30 minutes beforehand). Place the skewers on the grill and cook for 3-4 minutes per side, turning once, until the chicken is fully cooked and has nice grill marks.

5. Rest the Chicken

Remove the skewers from the grill and let them rest for 5 minutes before serving to allow the juices to redistribute.

Prepare the Dipping Sauce

6. Make the Zesty Sauce

In a small bowl, mix together mayonnaise, lemon juice, minced garlic, a touch of Dijon mustard, salt, and pepper to taste. Stir until smooth and creamy. Optionally, add a pinch of chili flakes for heat.

7. Chill the Sauce

Refrigerate the dipping sauce for at least 10 minutes before serving to allow the flavors to meld.

Serve the Dish

8. Plate & Serve

Arrange the grilled chicken pesto bites on a serving platter. Serve alongside the chilled zesty dipping sauce. Garnish with fresh chopped basil or a sprinkle of grated Parmesan cheese if desired.
