    In a pot, bring 4 cups of water to a boil. Slowly whisk in 1 cup of polenta. Reduce heat to low and cook for about 30 minutes, stirring frequently until thickened. Add salt and pepper to taste.

    In a non-stick skillet, heat olive oil over medium heat. Crack the eggs into the skillet and cook them to your desired doneness (sunny side up, over-easy, or scrambled). Season with salt and pepper.

    Slice the avocado in half, remove the pit, and scoop out the flesh. Slice it into thin pieces or mash it with a fork. Season with salt if desired.

    On a plate, place the cooked polenta or toasted sourdough slices. Top with the prepared eggs, a generous spoonful of romesco sauce, and sliced or mashed avocado.
