Steak Omelette

    Prepare Ingredients

    Chop the tomatoes and jalapenos into small pieces. If necessary, chop the steak into bite-sized pieces.

    Whisk Eggs

    In a mixing bowl, whisk together the eggs, salt, and black pepper until well combined.

    Cook Omelette

    Heat olive oil in a non-stick skillet over medium heat. Add the chopped steak and cook for 2-3 minutes until heated through. Add the tomatoes and jalapenos, and cook for an additional 2 minutes.

    Add Eggs

    Pour the whisked eggs over the steak mixture in the skillet. Let it cook undisturbed for about 2-3 minutes until the edges begin to set.

    Add Cheese

    Sprinkle the pepper jack cheese on top of the omelette. Fold the omelette in half and cook for another minute until the cheese melts.

    Once cooked to your liking, slide the omelette onto a plate.

    In another skillet, heat the olive oil over medium heat. Add the frozen hash browns, salt, and pepper. Cook for about 5-7 minutes on one side until golden brown, then flip and cook for another 5-7 minutes until crispy.

Toast

    Toast Bread

    While the omelette and hash browns are cooking, toast the bread slices in a toaster. Spread butter on the toast once done.
