Method
Dough Preparation

Activate Yeast
In a large bowl, mix warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

Add flour and salt to the yeast mixture. Mix until a dough forms. Knead on a floured surface for 8-10 minutes until smooth.

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Shape Pretzels
After the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope and twist into a pretzel shape.
Boiling and Baking

Boil Pretzels
Preheat the oven to 450°F (230°C). In a large pot, bring 10 cups of water to a boil and add baking soda. Boil each pretzel for 30 seconds, then remove and place on a baking sheet lined with parchment paper.

Bake in the preheated oven for 12-15 minutes or until golden brown.
