Method

Short Ribs Preparation

    Season the Ribs

    Generously season the beef short ribs with salt and black pepper on all sides.

    Sear the Ribs

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the short ribs and sear them until browned on all sides, about 3-4 minutes per side. Remove the ribs and set aside.

    Add Aromatics

    In the same pot, add minced garlic and sauté for about 1 minute until fragrant.

    Deglaze the Pot

    Pour in the port wine and scrape the bottom of the pot to release any browned bits. Let it simmer for 2-3 minutes.

    Add Broth

    Return the short ribs to the pot and add beef broth. Bring to a boil, then reduce heat to low, cover, and let simmer for about 2-3 hours, until the meat is tender.

Mirepoix Potato Preparation

    Prepare the Vegetables

    Peel and dice the potatoes, carrots, and onion into small cubes.

    Cook the Vegetables

    In a large pot, add diced potatoes, carrots, and onion. Cover with water and bring to a boil. Reduce heat and simmer for about 15-20 minutes until tender.

    Mash the Potatoes

    Drain the vegetables and return them to the pot. Add butter, salt, and pepper. Mash until smooth and creamy.

Steamed Broccoli Preparation

    Prepare the Broccoli

    Wash the broccoli florets and set aside.

    Steam the Broccoli

    In a pot, bring 1 cup of water to a boil. Place the broccoli florets in a steamer basket above the boiling water. Cover and steam for about 5-7 minutes until bright green and tender.

    Season the Broccoli

    Remove the steamed broccoli from the pot, season with salt, and serve.
