Method

    In a large mixing bowl, combine ground pork, sage, salt, black pepper, garlic powder, onion powder, red pepper flakes, and maple syrup. Mix thoroughly until all ingredients are well incorporated.

    Rinse the pork casings in cold water. Fit one end of the casing onto a sausage stuffer, and fill with the sausage mixture, being careful not to overstuff. Twist sausages into 4-inch links and tie off the ends.

    In a skillet over medium heat, cook the sausage links until browned and cooked through, about 15-20 minutes, turning occasionally.

    Prepare the Sausage Mixture

    In a large mixing bowl, combine ground pork, sage, salt, black pepper, garlic powder, onion powder, red pepper flakes, and maple syrup. Mix until well combined.

    Form Patties

    Shape the sausage mixture into patties, about 1/2 inch thick.

    Cook the Patties

    Heat a skillet over medium heat and cook the patties for about 5-7 minutes on each side, or until golden brown and cooked through.

    Cook the Meats

    In a large pot, cover the pork shoulder and liver with water and bring to a boil. Reduce heat and simmer until meat is tender, about 2 hours.

    Shred the Meat

    Remove the meats from the pot and allow them to cool slightly. Shred the pork shoulder and liver into small pieces.

    Combine and Cook

    In the same pot, add cornmeal, sage, salt, black pepper, and shredded meat. Stir and cook over medium heat for about 10 minutes until thickened.

    Set and Slice

    Pour the mixture into a loaf pan and let it cool completely. Once set, slice into pieces and fry in a skillet until crispy on both sides.
