Prepare the Chicken
In a large bowl, mix together the buffalo sauce, salt, and black pepper. Add the chicken breasts and marinate for at least 30 minutes or overnight in the refrigerator for more flavor.

Breading the Chicken
In a shallow dish, set up a breading station: one dish with flour, another with a mixture of beaten egg and milk, and a third with breadcrumbs. Dredge each marinated chicken breast in flour, shaking off excess, then dip in the egg mixture, and finally coat with breadcrumbs.

Frying the Chicken (Optional)
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded chicken breasts. Fry for about 6-7 minutes on each side or until golden brown and cooked through. Remove and place on a paper towel to drain excess oil.

Preheat your grill to medium heat. Grill the breaded chicken breasts for about 6-7 minutes on each side or until fully cooked and the internal temperature reaches 165°F (75°C).

Assemble the Sandwich
Slice the brioche buns in half and toast them lightly if desired. Spread mayonnaise on both sides of the buns. Layer with lettuce, followed by the cooked chicken, sliced tomatoes, and red onion. Top with the other half of the bun.
