Method
Fried Chicken
- 1
Prepare the Chicken
In a large bowl, pour buttermilk over the chicken halves and let marinate in the refrigerator for at least 1 hour, or overnight for best results.
- 2
Dredge the Chicken
In a separate bowl, mix together flour, salt, black pepper, paprika, garlic powder, and onion powder. Remove chicken from buttermilk and dredge in the flour mixture, shaking off excess.
- 3
Fry the Chicken
Heat vegetable oil in a large cast-iron skillet over medium-high heat. Once hot, carefully add the chicken, skin side down, and fry until golden brown, about 10-15 minutes per side. Ensure the internal temperature reaches 165°F (75°C).
- 4
Drain the Chicken
Once cooked, remove chicken from the skillet and place on a plate lined with paper towels to drain excess oil.

Make the Gravy
In the same skillet used for frying chicken, add the chicken drippings over medium heat. Whisk in flour and cook for 1-2 minutes. Gradually add chicken broth while whisking, and continue until thickened. Season with salt and black pepper to taste.
