Method

Fried Chicken

  1. 1

    Prepare the Chicken

In a large bowl, pour buttermilk over the chicken halves and let marinate in the refrigerator for at least 1 hour, or overnight for best results.

  2. 2

    Dredge the Chicken

In a separate bowl, mix together flour, salt, black pepper, paprika, garlic powder, and onion powder. Remove chicken from buttermilk and dredge in the flour mixture, shaking off excess.

  3. 3

    Fry the Chicken

Heat vegetable oil in a large cast-iron skillet over medium-high heat. Once hot, carefully add the chicken, skin side down, and fry until golden brown, about 10-15 minutes per side. Ensure the internal temperature reaches 165°F (75°C).

  4. 4

    Drain the Chicken

Once cooked, remove chicken from the skillet and place on a plate lined with paper towels to drain excess oil.

Mashed Potatoes

  1. 5

    Boil the Potatoes

Peel and chop the russet potatoes into quarters. Place in a pot of salted water and bring to a boil. Cook until tender, about 20-25 minutes.

  2. 6

    Mash the Potatoes

Once cooked, drain the potatoes and return to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

Chicken Gravy

  1. 7

    Make the Gravy

In the same skillet used for frying chicken, add the chicken drippings over medium heat. Whisk in flour and cook for 1-2 minutes. Gradually add chicken broth while whisking, and continue until thickened. Season with salt and black pepper to taste.

Vegetable of the Day

  1. 8

    Prepare the Green Beans

In a skillet, heat olive oil over medium heat. Add green beans, season with salt and black pepper, and sauté until tender, about 5-7 minutes.
