    Prepare the Au Jus

    In a medium saucepan, heat the beef broth (au jus) over medium heat until simmering. If desired, you can enhance the flavor by adding a splash of Worcestershire sauce or a pinch of garlic powder.

    Prepare the Sandwiches

    While the au jus is heating, slice the French rolls or hoagie buns in half lengthwise without cutting all the way through. Lay them open on a baking sheet.

    Assemble the Sandwiches

    Layer the sliced roast beef evenly inside each roll. Top each sandwich with two slices of provolone cheese. Place the assembled sandwiches in the oven under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.

    Serve the Sandwiches

    Remove the sandwiches from the oven and let them cool for a minute. Serve each sandwich with a small bowl of hot au jus for dipping. Add a dollop of horseradish sauce to the side for an extra kick.
