Preparation for Fish

Prepare Breading Station
Set up a breading station with three shallow bowls. Place flour in the first bowl, beaten eggs in the second bowl, and panko breadcrumbs mixed with salt, black pepper, and garlic powder in the third bowl.

Bread the Fish
Dredge each flounder fillet in flour, shaking off excess. Dip into the beaten eggs, and then coat with the panko mixture, ensuring even coverage.

Heat Oil
In a large frying pan, heat vegetable oil over medium-high heat until shimmering.

Fry the Fish
Carefully place the breaded flounder fillets into the hot oil, cooking for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Cut Potatoes
Peel and cut the potatoes into thick fries.

Soak Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Dry and Fry the Fries
Drain and pat dry the fries. Heat vegetable oil in a separate large frying pan over medium-high heat. Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Season with salt.
