Creamed Chipped Beef

Prepare the Dried Beef
Begin by rinsing the dried beef under cold water to remove excess salt. Pat dry with paper towels and slice it into small pieces.

Make the Roux
In a large skillet, melt the butter over medium heat. Once melted, gradually whisk in the flour, stirring continuously for about 2 minutes until it's golden and bubbly.

Add the Milk
Slowly pour in the milk while whisking to avoid lumps. Continue to stir until the mixture thickens, about 5-7 minutes.

Incorporate the Beef
Add the sliced dried beef to the skillet. Stir in salt and black pepper. Allow it to simmer for another 3-5 minutes until heated through.

Toast the Bread
While the beef mixture simmers, toast the slices of bread until golden brown.

Spoon the creamed chipped beef over the toasted bread and serve immediately.

Prepare the Potatoes
Peel and grate the potatoes. Place them in a clean cloth and squeeze out as much moisture as possible.

In a large skillet, heat the vegetable oil over medium-high heat. Add the chopped onion and sauté until translucent, about 2-3 minutes.

Cook for about 5-7 minutes until the bottom is golden brown. Flip and cook the other side for an additional 5-7 minutes until crispy.
