Dry the Potatoes
After soaking for about 30 minutes, drain the potato slices and pat them dry with paper towels. Make sure they are as dry as possible to achieve maximum crispiness.

In a large, deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a cooking thermometer to check the temperature.

Fry the Chips
Carefully add a handful of potato slices to the hot oil, being cautious not to overcrowd the pot. Fry them for about 2-3 minutes, or until they turn golden brown and crispy.

Drain and Season
Remove the chips from the oil with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Sprinkle with salt, pepper, and paprika while they are still hot.

Continue frying the remaining potato slices in batches until all are cooked. Serve warm or store in an airtight container once cooled.
