Preparation of Chicken

    Cook Chicken

    In a skillet over medium heat, cook the chicken breast until fully cooked, about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from skillet and let it rest for 5 minutes, then shred or chop into bite-sized pieces.

    Caramelize Onions

    Slice the large onion thinly. In the same skillet used for the chicken, add 2 tablespoons of olive oil over medium heat. Add the sliced onions, stirring occasionally. Cook for about 15-20 minutes until they are soft and golden brown. Remove from heat and set aside.

Making Pico de Gallo

    Prepare Pico de Gallo

    Chop the tomatoes, red onion, and jalapeño (remove seeds for less heat if desired). In a bowl, combine chopped tomatoes, red onion, cilantro, jalapeño, and lime juice. Mix well and season with salt to taste. Refrigerate until needed.

Assembling Quesadillas

    Assemble Quesadillas

    Heat a clean skillet over medium heat. Place one tortilla in the skillet, sprinkle half of the cheddar-jack cheese evenly over the tortilla. Add a portion of the cooked chicken and caramelized onions. Top with some more cheese and place a second tortilla on top. Cook for 3-4 minutes until the bottom is golden brown, then carefully flip and cook the other side until golden brown and the cheese has melted.

    Remove the quesadilla from the skillet, cut into wedges, and serve hot with a side of pico de gallo and sour cream.
