Chicken Cutlet Preparation

Prepare the Chicken
Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch using a meat mallet.

Set Up Breading Station
In three separate shallow dishes, place the flour in one, whisk the eggs in the second, and place the breadcrumbs in the third. Season the flour with salt and black pepper.

Bread the Chicken
Dredge each chicken breast in the flour, shaking off the excess, then dip it into the beaten eggs, and finally coat it with breadcrumbs, pressing gently to adhere.

Fry the Chicken
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the breaded chicken cutlets and fry until golden brown and cooked through, about 4-5 minutes per side. Remove from the skillet and let drain on paper towels.

Prepare the Bread
Slice the ciabatta bread in half horizontally and lightly toast the cut sides in a toaster or under a broiler until golden brown.

Assemble the Sandwich
Spread a generous amount of marinara sauce on the bottom half of each toasted ciabatta. Place one fried chicken cutlet on top of the sauce, followed by two slices of provolone cheese.

Melt the Cheese
If desired, place the assembled sandwiches under a broiler for 1-2 minutes to melt the provolone cheese.

Add Fresh Basil
Top the sandwiches with fresh basil leaves before placing the top half of the ciabatta bread on each sandwich.

Cut the sandwiches in half and serve hot with extra marinara sauce on the side for dipping.
