Prepare Chicken Parmesan

Prepare the Chicken
Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and black pepper on both sides.

Breading Process
Set up a breading station: Place flour in one shallow dish, beaten eggs in a second dish, and bread crumbs in a third dish. Dredge each chicken breast in flour, dip into the beaten eggs, and finally coat in bread crumbs.

Fry Chicken
In a large skillet, heat olive oil over medium heat. Once hot, add the breaded chicken breasts and fry for about 4-5 minutes on each side, or until golden brown. Remove and place on a baking sheet.

Add Sauce and Cheese
Spoon marinara sauce over each chicken breast. Sprinkle mozzarella and parmesan cheese on top. Bake in the preheated oven for 15-20 minutes, until the cheese is melted and bubbly.

Boil Water
In a large pot, bring 4 quarts of water to a boil. Add 1 tsp of salt to the water.

Cook Spaghetti
Add spaghetti to boiling water and cook according to package instructions, typically 8-10 minutes until al dente. Drain and set aside.

Sauté Vegetables
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add mixed vegetables, season with salt and black pepper, and sauté for about 5-7 minutes until tender.
