Preparation of Chicken Croquets

Cook the Base Mixture
In a large skillet over medium heat, add a tablespoon of oil. Sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.

Combine Ingredients
In a large bowl, combine the sautéed onion and garlic with the shredded chicken, parsley, salt, and black pepper. Mix well.

Form Croquets
Shape the chicken mixture into oval or round croquets, about 2 inches in diameter. Set aside on a plate.

Prepare for Frying
In a shallow bowl, beat the eggs. In another bowl, place the breadcrumbs. Dip each croquet first into the beaten eggs, then coat with breadcrumbs.

Fry the Croquets
In a large frying pan, heat the oil over medium heat. Once hot, fry the croquets in batches until golden brown, about 3-4 minutes per side.

Drain and Keep Warm
Transfer the fried croquets to a paper towel-lined plate to drain excess oil. Keep warm in an oven set to low heat.
Serving the Dish

Prepare Mashed Potatoes
While the croquets are frying, prepare the mashed potatoes according to your preference. Keep warm.

Cook Vegetables
Steam or sauté your choice of vegetables of the day until tender, about 5-7 minutes. Season with salt and pepper to taste.

Heat Chicken Gravy
In a small saucepan, heat the chicken gravy until warm.

Plate the Dish
On each plate, serve a portion of mashed potatoes, a serving of the croquets, a helping of the sautéed vegetables, and ladle the warm chicken gravy over the croquets.
