    Slice the Protein

    If using chicken breast, slice it into thin strips. If using roast beef, ensure it's pre-sliced for easy assembly.

    Prepare the Vegetables

    Slice the onion and bell pepper (if using) into thin strips.

Cooking

    Cook the Onions and Peppers

    In a large skillet, heat the olive oil over medium heat. Add the sliced onion and bell pepper (if using) and sauté for about 5-7 minutes, or until they are soft and golden brown. Season with salt and pepper.

    Add the Protein

    Add the sliced roast beef or chicken breast to the skillet with the sautéed onions and peppers. Stir and cook until the meat is heated through, about 3-5 minutes.

    Melt the Cheese

    Once the meat is heated through, layer the provolone cheese (and cheddar if desired) on top of the mixture. Cover the skillet with a lid and let it cook for another 2-3 minutes, or until the cheese is melted.

Assembly

    Prepare the Rolls

    While the cheese is melting, slice the hoagie rolls lengthwise, but do not cut all the way through.

    Fill the Rolls

    Once the cheese is melted, use a spatula to scoop the beef or chicken mixture into each hoagie roll.

    Serve the cheesesteaks warm with any desired condiments or toppings such as hot sauce or extra sautéed onions.
