Preparation

Chop the Vegetables

Dice the carrots, celery, and onion into small pieces. Mince the garlic cloves.

Prepare the Broth

In a large pot, combine the vegetable broth and water. Bring to a boil over medium-high heat.

Cooking

Add Vegetables

Once the broth is boiling, add the chopped carrots, celery, onion, and minced garlic. Stir well.

Season the Soup

Add the bay leaf, thyme, salt, and black pepper to the pot. Stir to incorporate the spices.

Simmer

Reduce the heat to low and let the soup simmer for about 20 minutes, or until the vegetables are tender.

Add Optional Ingredients

Add Chicken and Pasta (if using)

If you’re adding cooked chicken and/or pasta, do so at this point and simmer for an additional 5-10 minutes until heated through.

Add Spinach

Stir in the spinach and cook for another 2-3 minutes until wilted.

Serve

Final Touch

Remove the bay leaf before serving. Taste and adjust seasoning if necessary.

Ladle the soup into bowls or cups and serve hot.
