Cooking Rice

    Rinse the Rice

    In a fine mesh strainer, rinse the long-grain rice under cold water until the water runs clear.

    Boil Water

    In a medium saucepan, bring 2 cups of water to a boil over high heat.

    Add Rice and Salt

    Once the water is boiling, add the rinsed rice and salt. Stir briefly to combine.

    Simmer

    Reduce the heat to low, cover the saucepan, and let it simmer for about 18-20 minutes, or until the rice is tender and water is absorbed.

    Fluff and Set Aside

    Remove from heat and let it sit, covered, for 5 minutes before fluffing with a fork and setting aside.

Making Chicken Soup

    Sauté Vegetables

    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion, minced garlic, diced carrots, and diced celery. Sauté for about 5-7 minutes, until the vegetables are softened.

    Add Chicken

    Add the diced chicken breast to the pot and cook for another 5 minutes, stirring occasionally, until the chicken is no longer pink.

    Add Broth and Seasonings

    Pour in 4 cups of chicken broth, add the dried thyme, pepper, and bay leaf. Bring the soup to a boil.

    Simmer the Soup

    Once boiling, reduce the heat to low and let it simmer for about 20-25 minutes, or until the chicken is cooked through and the flavors meld.

    Taste and Adjust Seasoning

    Taste the soup and adjust the seasoning with additional salt and pepper if needed. Remove the bay leaf before serving.
