Preparation of Proteins

Grill the Proteins
Choose any three proteins from the grilled items list. Preheat the grill to medium-high heat. Season your chosen proteins with salt, pepper, and your favorite spices. Grill each protein for about 5-7 minutes on each side or until fully cooked. For shrimp, grill until they turn pink and opaque.
Assembling the Rolls

Prepare the Rice Paper
Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds or until it becomes soft. Lay it flat on a clean surface.

Layer the Ingredients
On the bottom third of the rice paper, place a lettuce leaf, followed by a few pieces of the grilled protein, a handful of carrots, cucumber, cilantro, and mint leaves.

Roll the Wrapper
Fold the sides of the rice paper over the filling, then roll it tightly from the bottom to the top to form a roll. Repeat the process for the remaining wrappers and fillings.
Serving the Rolls

Serve with Dipping Sauces
Arrange the rolls on a serving platter. Serve with soy sauce and peanut sauce for dipping.
