Prepare Vegetables

Slice the green bell pepper and onion into thin strips.

Cook Steak

In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the thinly sliced steak, season with salt and black pepper, and cook for about 3-4 minutes until the steak is browned and cooked through. Remove from skillet and set aside.

Sauté Vegetables

In the same skillet, add another tablespoon of olive oil. Add the sliced green bell pepper and onion. Sauté for about 5-6 minutes until the vegetables are softened and slightly caramelized. Remove from heat.

Assembly

Assemble Sandwich

Lay out 2 slices of sourdough bread. On each slice, layer 2 slices of American cheese, followed by the cooked steak, sautéed vegetables, and then top with the remaining slices of American cheese. Finally, place the other slices of sourdough bread on top.

Grilling

Grill Sandwich

Heat the skillet over medium-low heat. Place the assembled sandwiches in the skillet. Grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted. You may need to cover the skillet to facilitate melting.

Remove the grilled cheese from the skillet, slice in half if desired, and serve hot.
