Method

Preparation Steps

  1. 1

    Make the Vanilla Sponge Cake

Preheat the oven to 350°F (175°C). Grease and flour a large jelly roll pan. In a bowl, whisk together eggs and sugar until pale and fluffy. Gradually fold in sifted flour and vanilla extract. Pour the batter into the prepared pan and spread evenly. Bake for 12-15 minutes until golden. Once baked, invert onto a clean kitchen towel dusted with powdered sugar and roll it up. Let it cool.

  2. 2

    Prepare the Raspberry Chocolate Mousse

In a bowl, melt the dark chocolate over a double boiler. Let it cool slightly. In another bowl, whip heavy cream to soft peaks. Fold the melted chocolate and raspberry puree into the whipped cream until well combined. Chill in the refrigerator until set.

  3. 3

    Make the Butter Cream Frosting

In a large bowl, beat together softened butter and powdered sugar until light and fluffy. Add milk and vanilla extract, beating until smooth and spreadable. Adjust consistency with more milk or sugar if needed.

  4. 4

    Assemble the Yule Log

Unroll the cooled sponge cake and spread a layer of raspberry chocolate mousse over it. Roll the cake back up tightly and place it seam-side down on a serving platter. Cover the entire log with butter cream frosting. Use a fork to create bark-like textures. Decorate with fresh berries.
