Prepare the Sushi Rice

Rinse sushi rice under cold water until the water runs clear. Cook the rice according to package instructions, then let it cool.

Make the Wasabi Butter

In a small bowl, combine softened unsalted butter with wasabi. Mix well until smooth and set aside.

Prepare the Fillings

Thinly slice the cucumber and avocado. Set aside.

Assemble the Rolls

On a bamboo sushi mat, lay a sheet of nori. Spread a thin layer of sushi rice over the nori, leaving a small border at the edges. Place tempura shrimp, cucumber, and avocado in the center.

Roll and Cut

Using the bamboo mat, carefully roll the nori away from you, pressing gently to form a tight roll. Once rolled, slice into bite-sized pieces.

Coat and Fry

Dip each sushi roll in panko breadcrumbs, making sure to coat evenly. Heat vegetable oil in a pan over medium heat and fry the rolls until golden brown on all sides. Remove and drain on paper towels.

Serve

Place the fried rolls on a serving platter. Drizzle with wasabi butter and garnish with tobiko and sesame seeds. Serve with soy sauce on the side.
