Preparation
Make the Pesto
In a food processor, combine basil leaves, pine nuts, garlic, Parmesan cheese, and salt. Pulse until finely chopped. With the processor running, drizzle in olive oil until the mixture is smooth. Add lemon juice, black pepper, and adjust seasoning to taste. Set aside.
Prepare the Focaccia
Slice the Ohia Bakery Focaccia into pieces suitable for serving. Optionally, you can lightly toast them in an oven for added crispiness.
Assemble the Dish
On a serving plate, place the burrata cheese in the center. Surround it with slices of Hau’ula tomatoes. Drizzle with lavender honey and spoon the Waimanalo herb pesto over the top. Serve with focaccia on the side.
