Prepare the Noodles
Soak the bihon noodles in warm water for about 15 minutes until softened. Drain and set aside.
Cook the Vegetables
In a large pan, heat the vegetable oil over medium heat. Add the minced garlic and sauté until fragrant. Add the carrots and cook for 2-3 minutes, then add the cabbage and green onions. Stir-fry until the vegetables are tender.
Combine Ingredients
Add the shredded chicken and soaked bihon noodles to the pan. Pour in the soy sauce and season with salt and pepper. Toss everything together until well combined and heated through.
Wrap the Lumpia
Place about 2 tablespoons of the pancit mixture onto the lower half of an egg roll wrapper. Fold the bottom over the filling, then fold in the sides and roll tightly. Seal the edge with a little water.
Fry the Lumpia
In a large skillet, heat oil over medium-high heat. Fry the lumpia in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
Serve
Serve hot with a dipping sauce of your choice, such as vinegar or sweet and sour sauce.
