Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it cool slightly.

Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Fold this mixture into the cooled rice gently, being careful not to mash the rice.

Prepare the Spicy Ahi Filling
In a bowl, combine the diced Ahi tuna with kabayaki sauce and sriracha. Mix well and set aside.

Assemble the Sushi Roll
Place a sheet of nori on a bamboo sushi mat. Wet your hands to prevent sticking and spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge. Add a line of the spicy Ahi filling across the middle of the rice, and sprinkle with tobiko and sesame seeds.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep it tight. Roll until the edge of the nori is reached and wet it with a little water to seal the roll.

Slice and Serve
Use a sharp knife to slice the sushi roll into 6-8 pieces. Serve immediately with additional kabayaki sauce and wasabi aioli on the side.
