Prepare the Fish
Rinse the Kona Kanpachi fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

Coat the Fish
Spread the all-purpose flour on a plate. Dredge each fillet in flour, ensuring an even coat on both sides.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it shimmers.

Fry the Fish
Carefully place the coated fillets in the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and crispy.

Drain and Serve
Remove the fried fish from the skillet and drain on paper towels. Serve hot, garnished with your choice of fresh herbs or citrus.
