Preparation Steps

    Marinate the Steak

    In a bowl, mix soy sauce, brown sugar, minced garlic, grated ginger, black pepper, sesame oil, and red chili flakes. Add the flank steak and marinate for at least 2 hours, preferably overnight.

    Prepare the Spicy Tomato Sambal

    In a saucepan, combine diced tomatoes, chopped cilantro, lime juice, and salt. Cook over medium heat until tomatoes soften and flavors meld, about 10-15 minutes.

    Cook the Steak

    Preheat a grill or skillet over medium-high heat. Remove the steak from the marinade and grill for about 5-7 minutes on each side for medium-rare, or until desired doneness. Let rest for 5 minutes before slicing.

    Prepare the Hanalei Poi

    If using pre-packaged poi, simply follow the instructions on the package. For homemade poi, mix cooked taro with water to achieve desired consistency.

    Slice the flank steak against the grain and serve with spicy tomato sambal and seasoned Hanalei poi on the side.
