    Make the Toffee Graham Cracker Crust

    Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, toffee bits, and melted unsalted butter until combined. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until golden. Let it cool completely.

    Prepare the Mango Mousse

    In a small bowl, sprinkle gelatin over water and let it sit for 5 minutes to bloom. In a mixing bowl, beat cream cheese, sugar, and vanilla until smooth. In another bowl, whip heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture. Heat the bloomed gelatin in the microwave for 10 seconds until melted, then fold it into the mixture along with the mango puree. Pour the mousse over the cooled crust and refrigerate for at least 4 hours.

    Make the Mixed Berry Anglaise

    In a saucepan over medium heat, combine mixed berries, sugar, and water. Cook until the berries break down, about 5-7 minutes. Remove from heat and blend until smooth. Stir in vanilla extract and strain if desired for a smooth sauce. Allow to cool.

    Serve

    Once the cheesecake is set, slice and serve with a drizzle of mixed berry anglaise on top.
