Method

Turkey Breast Roulade

    Prepare the Turkey Breast

    Preheat the oven to 375°F (190°C). Butterfly the turkey breast and season with salt and black pepper.

    Stuff the Roulade

    Spread the wild boar stuffing evenly over the turkey breast. Roll it up tightly and secure with kitchen twine.

    Heat olive oil in a skillet over medium-high heat. Sear the roulade on all sides until golden brown. Transfer to the oven and bake for 25-30 minutes until cooked through.

Wild Boar Stuffing

    In a large skillet, cook the wild boar sausage over medium heat until browned. Add onion, celery, and garlic, cooking until softened.

Confit Dark Meat

    In a saucepan, combine turkey drippings and flour over medium heat. Whisk until smooth. Gradually add chicken broth, then season with salt and black pepper.

Golden Raisin Marmalade

    In a saucepan, combine golden raisins, sugar, and water. Cook over medium heat until thickened, then stir in lemon juice.
