Cook the Gnocchi
Bring a large pot of salted water to a boil. Add the Onda Pasta Gnocchi and cook according to package instructions, usually about 2-3 minutes until they float. Drain and set aside.

Prepare the Mushroom Relish
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add chopped Portabella mushrooms and sauté for about 5 minutes until they are soft. Season with salt and black pepper. Remove from heat and set aside.

Make the Alfredo Sauce
In the same skillet, add the heavy cream and bring to a simmer. Stir in the Fontina cheese until melted and smooth. Season with salt and black pepper to taste. Remove from heat.

Cook the Garlic Shrimp
In another skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add the shrimp and cook until they turn pink, about 3-4 minutes. Drizzle with truffle oil and toss to combine.

Combine Everything
In a large bowl, combine the cooked gnocchi, Alfredo sauce, mushroom relish, and garlic shrimp. Toss gently to combine all ingredients.

Garnish with chopped parsley and additional truffle oil if desired. Serve immediately.
