Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to form fries.

Soak the Fries
Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Drain the soaked fries and pat them dry with paper towels. Carefully add them to the hot oil in batches, frying until golden brown and crispy, about 4-5 minutes per batch.

Season the Fries
Once fried, remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt, black pepper, and toss with grated Parmesan cheese.

Add Truffle Oil
Drizzle the truffle oil over the fries and mix gently to combine.

Garnish and Serve
Garnish with freshly chopped parsley and serve immediately.
