Method

Preparation

  1. 1

    Prepare the Fish

Cut the Big Eye 'Ahi into small cubes, about 1/2 inch in size. Place the fish in a mixing bowl.

  2. 2

    Add the Onions

Finely chop the Maui onion and add it to the bowl with the fish.

  3. 3

    Incorporate Inamona

Add the roasted Inamona to the mixture, ensuring it's evenly distributed.

  4. 4

    Spice it Up

Add chili to taste, depending on how spicy you want the poke to be.

  5. 5

    Mix in Ogo

Rinse the Ogo in cold water and chop it into small pieces before adding it to the mixture.

  6. 6

    Season with Salt

Sprinkle the Hawaiian salt over the mixture and toss gently to combine all the ingredients.

  7. 7

    Garnish with Green Onion

Chop the green onion and sprinkle it over the poke as a garnish before serving.

  8. 8

    Serve

Let the poke sit for about 10 minutes to allow the flavors to meld, then serve chilled.
