    Prepare the Ribs

    Preheat your oven to 300°F (150°C). Pat the baby back ribs dry with paper towels. Rub the salt, black pepper, garlic powder, and onion powder all over the ribs.

    Make the Sauce

    In a saucepan over medium heat, combine soy sauce, brown sugar, rice vinegar, Szechuan peppercorns, minced garlic, grated ginger, chili paste, and sesame oil. Stir until the sugar is dissolved and let it simmer for about 10 minutes.

    Bake the Ribs

    Place the ribs on a baking sheet lined with foil. Brush half of the Mongolian BBQ sauce over the ribs. Cover with another layer of foil and bake for 2.5 hours.

    Glaze and Finish

    Remove the foil and brush the remaining sauce over the ribs. Increase the oven temperature to 400°F (200°C) and bake for an additional 20-30 minutes until the ribs are caramelized and tender.

    Serve

    Remove the ribs from the oven, let them rest for a few minutes, then cut and serve with extra sauce on the side.
