    Prepare the Ribs

    Preheat your oven to 300°F (150°C). Rinse the baby back ribs under cold water and pat them dry with paper towels. Season both sides of the ribs with salt and black pepper.

    Make the Szechuan BBQ Sauce

    In a saucepan over medium heat, combine soy sauce, rice vinegar, brown sugar, ground Szechuan peppercorns, chili paste, minced garlic, grated ginger, and sesame oil. Stir well and bring to a simmer.

    Thicken the Sauce

    In a small bowl, mix cornstarch and water to make a slurry. Slowly add this to the simmering sauce, stirring continuously until the sauce thickens. Remove from heat and set aside.

    Bake the Ribs

    Place the seasoned ribs on a baking sheet lined with foil. Cover the ribs with another piece of foil and bake in the preheated oven for 2.5 to 3 hours until tender.

    Grill the Ribs

    Preheat your grill to medium-high heat. Once the ribs are tender, remove them from the oven, uncover, and brush generously with the Szechuan BBQ sauce.

    Finishing Touches

    Grill the ribs for an additional 5-10 minutes, turning occasionally, until the sauce caramelizes and the ribs have a nice char. Remove from the grill and let them rest for a few minutes before slicing.
