    Prepare the Crust

    Preheat the oven to 350°F (175°C). Crush the Oreo cookies into fine crumbs and mix with melted butter. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove from oven and set aside to cool.

    Make the Cheesecake Filling

    In a large mixing bowl, beat the cream cheese with sugar and vanilla extract until smooth. Add eggs one at a time, mixing well after each addition. Stir in sour cream until well combined.

    Add Strawberries

    Chop the strawberries and gently fold them into the cheesecake mixture.

    Bake the Cheesecake

    Pour the filling into the cooled crust. Bake for 50-60 minutes or until the center is set and the edges start to crack. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

    Chill and Serve

    Once cooled, refrigerate the cheesecake for at least 4 hours or overnight. Before serving, drizzle with caramel sauce and garnish with chocolate truffle shavings.
