    Pickle the Red Onion

    In a small bowl, combine the thinly sliced red onion and vinegar. Let it sit for at least 30 minutes, stirring occasionally.

    Prepare the Polenta

    In a saucepan, bring the water or broth to a boil. Slowly whisk in the polenta, reduce heat to low, and cook for about 15-20 minutes, stirring frequently until thickened. Season with salt and pepper to taste.

    Cook the Mushrooms

    In a skillet, heat 1 tablespoon of truffle oil over medium heat. Add the chopped mushrooms and sauté until golden brown, about 5-7 minutes. Season with salt and pepper.

    Cook the Snapper and Shrimp

    In the same skillet, add the remaining tablespoon of truffle oil. Season the snapper fillets with salt and pepper. Cook them skin-side down for about 4-5 minutes, flip, and cook for another 2-3 minutes until cooked through. Add the shrimp and cook until they turn pink, about 2-3 minutes.

    Assemble the Dish

    On a plate, spoon the polenta, top with sautéed mushrooms, place the snapper and shrimp, and drizzle with chili oil. Garnish with pickled red onion and chopped parsley.
