Prepare the Sourdough Toast
Preheat your oven to 375°F (190°C). Place the sourdough slices on a baking sheet and brush both sides lightly with olive oil. Toast them in the oven for about 10-12 minutes or until golden and crispy.

Prepare the Toppings
While the bread is toasting, chop the Hau'ula tomatoes into small cubes and place them in a bowl. Add a pinch of salt and black pepper to taste. Tear the basil leaves and mix them with the tomatoes.

Melt the Fontina Cheese
In a small saucepan, melt the fontina cheese over low heat until it is smooth and creamy. Stir occasionally to prevent it from burning.

Assemble the Bruschetta
Once the sourdough toast is ready, remove it from the oven. Spread a layer of melted fontina cheese on each slice. Top with the tomato and basil mixture and finally, place slices of smoked salmon on top.

Serve
Drizzle a little more olive oil on top if desired, and serve immediately while warm.
