Cook the Cha Soba Noodles
Bring a pot of water to a boil. Add the cha soba noodles and cook according to package instructions (about 4-5 minutes). Drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Tsukemono
If using store-bought tsukemono, simply arrange on a serving plate. If making from scratch, prepare your favorite pickles (such as daikon, cucumber, or eggplant) using rice vinegar, salt, and sugar.

Assemble the Dish
In a serving bowl, place a portion of the chilled cha soba noodles. Top with slices of smoked salmon, a dollop of ikura, and arrange the tsukemono on the side.

Drizzle with Tosazu Dressing
Prepare the tosazu dressing by mixing equal parts rice vinegar and soy sauce, and a splash of mirin. Drizzle over the assembled dish to taste.
