Prepare the Ribs
Preheat your smoker to 225°F (107°C). Remove the membrane from the back of the baby back ribs for better flavor absorption.

Season the Ribs
In a small bowl, combine the Mongolian spice mix, brown sugar, salt, black pepper, garlic powder, onion powder, and cayenne pepper. Rub this mixture all over the ribs generously.

Smoke the Ribs
Place the seasoned ribs in the smoker and smoke for about 4-5 hours, or until the internal temperature reaches 190°F (88°C) and the meat is tender.

Prepare the Scallion Oil
While the ribs are smoking, finely chop the scallions. Heat the vegetable oil in a small saucepan over medium heat. Add the scallions and cook until they are a vibrant green and fragrant, about 2-3 minutes.

Serve
Once the ribs are done, remove them from the smoker and let them rest for 10 minutes. Slice the ribs and drizzle with the scallion oil before serving.
