Prepare the Marinade
In a bowl, mix together honey, Dijon mustard, soy sauce, minced garlic, salt, and black pepper.

Marinate the Ribs
Place the beef short ribs in a large resealable bag or a shallow dish and pour the marinade over the ribs. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.

Sear the Ribs
Remove the ribs from the marinade and pat dry. Heat olive oil in a large skillet over medium-high heat. Sear the ribs on all sides until browned, about 3-4 minutes per side.

Slow Braise the Ribs
In a slow cooker, add the seared ribs, reserved marinade, beef broth, and fresh thyme. Cover and cook on low for 6-8 hours or until the ribs are tender.

Prepare the Lomi Tomatoes
While the ribs are cooking, chop the lomi tomatoes and season with salt and olive oil. Let them sit to absorb flavors.

Once the ribs are done, serve hot with the lomi tomatoes on the side.
