1. Prepare the Wafu Sauce
In a small bowl, whisk together soy sauce, mirin, sake, sugar, and sesame oil until the sugar is dissolved.
2. Sauté the Vegetables
In a large skillet or toban (griddle), heat vegetable oil over medium-high heat. Add the shimeji mushrooms, bell pepper, and zucchini. Sauté for about 3-4 minutes until they start to soften. Remove the vegetables from the skillet and set aside.
3. Cook the Beef
In the same skillet, add the thinly sliced beef sirloin in batches, cooking for 2-3 minutes until browned and just cooked through. Return the vegetables to the skillet.
4. Add Sauce and Serve
Pour the prepared Wafu sauce over the beef and vegetables. Stir well to combine and cook for an additional 2 minutes. Garnish with chopped green onions before serving.
