    Prepare the Ingredients

    Slice the pork belly into bite-sized pieces. Chop the tomatoes and onion. Set aside the shrimp and ong choy.

    Cook the Pork

    In a large pot, add the pork belly and water. Bring to a boil and simmer for about 30 minutes until the pork is tender.

    Add Vegetables

    Add the chopped tomatoes, onion, and fish sauce to the pot. Simmer for an additional 10 minutes.

    Flavor the Broth

    Stir in the tamarind paste and green chili peppers. Adjust seasonings with salt and black pepper to taste.

    Add Shrimp and Ong Choy

    Add the shrimp and ong choy to the pot. Cook for another 5-7 minutes until the shrimp are pink and the ong choy is tender.

    Ladle the sinigang into bowls and serve hot with steamed rice.
