Shrimp Scampi

Method

Cooking Instructions

  1. 1

    Prepare the Fettuccini

Bring a large pot of salted water to a boil. Add the fettuccini and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

  2. 2

    Make the Beurre Noisette

In a large skillet, melt the butter over medium heat. Continue cooking until the butter turns a golden brown color and has a nutty aroma, about 5 minutes. Be careful not to burn it.

  3. 3

    Cook the Shrimp

Add the olive oil and minced garlic to the skillet with the browned butter. Sauté for 1-2 minutes until fragrant. Add the shrimp, season with salt, black pepper, and red pepper flakes to taste, and cook for about 3-4 minutes until the shrimp are pink and opaque.

  4. 4

    Combine Ingredients

Add the halved cherry tomatoes to the skillet and cook for an additional 2-3 minutes until they begin to soften. Stir in the cooked fettuccini and lemon juice. Toss everything together, adding reserved pasta water as needed to loosen the sauce.

  5. 5

    Serve

Remove from heat, garnish with chopped parsley, and serve immediately.
