    Prepare the Ingredients

    Chop the onion, mince the garlic, and slice the mushrooms. Set aside.

    Cook the Bacon

    In a large skillet, heat the olive oil over medium heat. Add the diced bacon and cook until crispy. Remove the bacon and set aside, leaving the rendered fat in the pan.

    Sauté the Vegetables

    In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes until translucent. Add the sliced mushrooms and continue to cook for another 3-4 minutes.

    Add the Rice

    Stir in the Arborio rice, cooking for 1-2 minutes until lightly toasted.

    Deglaze and Simmer

    Pour in 1 cup of chicken broth, stirring constantly until absorbed. Continue adding broth, one cup at a time, allowing each cup to be absorbed before adding the next.

    Add Shrimp and Sundried Tomatoes

    Once the rice is creamy and al dente, stir in the shrimp and sundried tomatoes. Cook for 3-5 minutes until the shrimp are pink and cooked through.

    Finish with Spinach and Cheese

    Reduce heat and fold in the fresh spinach and Parmesan cheese. Season with salt and black pepper to taste.

    Top with crispy bacon and serve immediately.
