    Pat the fish fillets dry with paper towels. Season both sides with salt and black pepper.

    In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Add the fish fillets to the skillet, skin-side down (if applicable). Sear for about 4-5 minutes until the skin is crispy and the fish easily releases from the pan.

    Carefully flip the fish and cook for an additional 3-4 minutes, or until cooked through and opaque.

    In a saucepan, combine 1 cup of coconut milk with 2-3 tablespoons of red Thai curry paste. Simmer over low heat for about 5-7 minutes, stirring occasionally.
